Sweet Potato and Black Bean Quesadillas

INGREDIENTS

- Heat the olive oil in a large skillet over medium heat. Add the sweet potatoes and cook for 5 minutes, stirring occasionally. Add the black beans, onion, garlic, chili powder, cumin, salt, and pepper and cook for an additional 5 minutes, stirring occasionally.
- Lay out four flour tortillas. Divide the sweet potato mixture among the four tortillas, spreading it evenly over each one. Sprinkle the shredded cheese over the top of the sweet potato mixture. Place another tortilla on top of each one and press down lightly to seal.
- Heat a large skillet over medium heat. Place one quesadilla in the skillet and cook for 3-4 minutes per side, or until golden brown and the cheese is melted. Repeat with the remaining quesadillas.
