Lemon Macarons
These lemon macarons are light, crisp and chewy with a tart and sweet lemon buttercream filling.

INGREDIENTS
- Preheat oven to 150°C (300°F). Line two baking trays with baking paper. Sift almond flour and icing sugar into a bowl. In a separate bowl, whisk egg whites until stiff peaks form. Gradually add caster sugar and continue to whisk until glossy. Gently fold in almond flour mixture until combined. Spoon mixture into a piping bag fitted with a 1cm round nozzle. Pipe 3cm rounds onto prepared trays, leaving 2cm between each macaron. Tap trays on bench top to remove any air bubbles. Bake for 15 minutes or until lightly golden. Allow to cool completely.
- Beat butter and icing sugar together until pale and creamy. Add lemon juice and beat until combined. Spread a teaspoon of filling onto half of the macarons. Sandwich with remaining macarons and press lightly to secure.
