Crème Brûlée
This classic French dessert is a rich custard topped with a layer of caramelized sugar.

INGREDIENTS

- Preheat the oven to 300°F (150°C).
- In a medium saucepan, heat the cream and vanilla bean over medium heat until it just begins to simmer. In a separate bowl, whisk together the egg yolks and granulated sugar until light in color. Slowly pour the hot cream into the egg mixture, whisking constantly. Strain the custard through a fine-mesh sieve into a large measuring cup or bowl. Divide the custard among six 6-ounce (180 ml) ramekins.
- Place the ramekins in a baking dish and fill the dish with enough hot water to come halfway up the sides of the ramekins. Bake for 30 minutes, or until the custards are just set. Remove the ramekins from the water bath and let cool to room temperature.
- Sprinkle the demerara sugar evenly over the top of each custard. Using a kitchen torch, melt the sugar until it is bubbly and golden brown. Serve immediately.
