Fruit Tart

INGREDIENTS

- In a large bowl, whisk together the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse meal. Add the ice water and stir until the dough just comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 375°F (190°C).
- On a lightly floured surface, roll out the dough to a 12-inch (30 cm) round. Transfer the dough to a 9-inch (23 cm) tart pan with a removable bottom. Trim the edges and prick the bottom of the dough with a fork. Line the dough with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove the parchment and weights and bake for an additional 10 minutes, or until the crust is golden brown.
- In a small bowl, whisk together the egg yolk and cream. Brush the mixture over the bottom of the crust. Arrange the fruit on top of the tart in concentric circles. Bake for 30 minutes, or until the fruit is tender and the crust is golden brown.
- Allow the tart to cool before serving.
