Classic Pot Roast

- Preheat oven to 350 degrees F (175 degrees C).
- Heat the olive oil in a large Dutch oven over medium-high heat. Season the beef with salt and pepper and brown on all sides.
- Remove the beef from the pan and set aside. Add the onion, carrots, celery, and garlic to the pan and cook until softened, about 5 minutes.
- Stir in the tomato paste and cook for 1 minute. Pour in the red wine and beef broth and bring to a boil. Return the beef to the pan and add the bay leaves and thyme. Cover and transfer to the preheated oven.
- Cook in the preheated oven until the beef is tender, about 3 hours. Remove from the oven and let rest for 10 minutes before serving.
