Breakfast Burrito

INGREDIENTS

- Heat a non-stick pan over medium heat. Add the diced potatoes and cook for 5 minutes, stirring occasionally. Crack the eggs into a bowl and add salt and pepper. Whisk together until combined. Pour the egg mixture into the pan with the potatoes and scramble until cooked through. Remove from heat and set aside.
- Lay out two large tortillas on a flat surface. Divide the egg and potato mixture between the two tortillas. Sprinkle each with 1/8 cup of shredded cheese. Fold in the sides of the tortilla and roll up to form a burrito.
- Heat a non-stick pan over medium heat. Place the burritos seam side down in the pan and cook for 2 minutes, flipping halfway through. Serve warm.
