Cannoli

INGREDIENTS

- In a large bowl, combine the flour, butter, sugar, and salt. Using your fingertips, rub the butter into the flour until the mixture resembles coarse meal. In a small bowl, combine the vinegar and cold water. Sprinkle over the flour mixture and stir with a fork until the dough comes together.
- Turn the dough out onto a lightly floured work surface and knead it a few times to make sure all the ingredients are evenly distributed. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour or up to overnight.
- In a medium bowl, combine the ricotta, confectioners' sugar, vanilla, and chopped chocolate. Stir until well blended.
- On a lightly floured work surface, roll out the dough to 1/8 inch thick. Cut out circles using a 3-inch biscuit cutter. Wrap each circle around a cannoli tube, overlapping the edges slightly. Seal the edges with a little beaten egg. Heat the oil in a deep fryer or heavy pot to 375°F. Fry the cannoli, a few at a time, until golden brown, about 2 minutes. Drain on paper towels. Let cool completely before filling.
- Using a pastry bag fitted with a plain tip, fill each cannoli with the ricotta filling. Serve immediately or store in an airtight container for up to 3 days.
