Classic Apple Pie

INGREDIENTS

- In a large bowl, whisk together the flour and salt. Cut in the butter using a pastry blender or two knives until the mixture resembles coarse crumbs. Add the ice water and stir until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for 30 minutes.
- In a large bowl, combine the apples, sugar, cinnamon, nutmeg, and lemon juice. Mix until the apples are evenly coated.
- Preheat oven to 375°F (190°C). Roll out one disc of dough on a lightly floured surface to fit a 9-inch (23 cm) pie plate. Transfer the dough to the pie plate. Pour the filling into the crust. Roll out the second disc of dough and place it over the filling. Trim the edges and crimp. Cut several slits in the top of the crust. Brush the top of the crust with the beaten egg. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbling.
