Chicken and Dumplings

INGREDIENTS
- In a large pot over medium heat, add the chicken breasts. Cover with water and bring to a boil. Reduce heat to low and simmer for 15 minutes, or until chicken is cooked through. Remove chicken from pot and set aside to cool.
- Add the onion, celery, carrots, and garlic to the pot with the chicken broth. Bring to a boil, reduce heat to low, and simmer for 10 minutes. Shred the cooled chicken and add it to the pot. Simmer for an additional 10 minutes.
- In a medium bowl, mix together the flour, butter, baking powder, salt, and pepper. Slowly stir in the milk until a soft dough forms. Drop spoonfuls of the dough into the simmering broth. Cover and cook for 10 minutes, or until the dumplings are cooked through.
- Stir in the thyme and parsley. Taste and adjust seasonings as desired. Serve hot.
