Carrot Cake

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, whisk together the flour, baking soda, cinnamon and salt.
- In a large bowl, mix together the oil, white sugar and brown sugar until well blended. Beat in the eggs one at a time, then stir in the vanilla. Gradually blend in the dry ingredients. Finally stir in the grated carrots and chopped nuts.
- Spread evenly into a 9x13 inch baking pan. Bake for 30 to 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean.
- To make the frosting, combine the cream cheese, butter, confectioners' sugar and milk. Beat until the mixture is smooth and creamy. Frost the cooled cake.
