Italian Wedding Soup

- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic to the pot. Sauté until vegetables are softened, about 5 minutes.
- Pour in chicken broth and water. Add oregano, salt, and pepper. Bring to a boil.
- In a medium bowl, mix together egg, ground beef, breadcrumbs, Parmesan cheese, and salt. Form into small meatballs. Drop into the boiling soup.
- Stir in acini di pepe pasta. Simmer for 10 minutes or until pasta is cooked through.
- Stir in spinach and cook until wilted, about 2 minutes.
