Cauliflower Fried Rice
This delicious and healthy fried rice is made with cauliflower instead of white rice.

INGREDIENTS
- Cut the cauliflower into small florets and pulse in a food processor until it resembles grains of rice.
- Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, carrots, and frozen peas and cook for 5 minutes, stirring occasionally. Add the cauliflower rice and cook for an additional 5 minutes, stirring occasionally.
- Stir in the soy sauce, sesame oil, and scallions. Cook for 1 minute more. Serve warm.
