Veggie Burger
A delicious and healthy veggie burger made with black beans, mushrooms, and quinoa.

INGREDIENTS

- Drain and rinse the black beans. Dice the mushrooms, onion, and garlic. Cook the quinoa according to package instructions.
- In a large bowl, combine the black beans, mushrooms, onion, garlic, breadcrumbs, egg, olive oil, salt, and pepper. Mix until everything is evenly distributed.
- Divide the mixture into 4 equal parts and form each part into a patty. Place the patties on a plate or baking sheet lined with parchment paper.
- Heat a skillet over medium heat and add 1 tablespoon of olive oil. Place the patties in the skillet and cook for 5 minutes per side, or until golden brown.
- Serve the veggie burgers on buns with your favorite toppings.
