Pad Thai
This classic Pad Thai recipe is made with stir-fried rice noodles, shrimp, and a delicious homemade Pad Thai sauce.

INGREDIENTS

- Soak the rice noodles in hot water for about 15 minutes or until softened.
- In a small bowl, whisk together the Pad Thai sauce ingredients: fish sauce, tamarind paste, brown sugar, and lime juice. Set aside.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook until pink, about 2 minutes. Add the eggs and scramble until cooked through. Add the scallions, garlic, and bean sprouts and stir-fry for 1 minute. Drain the noodles and add them to the pan. Pour the Pad Thai sauce over the noodles and stir-fry until everything is combined and the noodles are tender, about 2 minutes.
- Serve the Pad Thai with ground peanuts and lime wedges.
