Biscuits and Gravy

INGREDIENTS

- Preheat oven to 425°F. In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until it resembles coarse crumbs. Stir in the milk until just combined. Turn out onto a lightly floured surface and knead gently 4 or 5 times. Pat or roll out to 3/4-inch thickness. Cut out biscuits using a 2-inch biscuit cutter. Place on an ungreased baking sheet and bake for 12 to 15 minutes, or until golden brown.
- In a large skillet over medium heat, cook the sausage until no longer pink. Drain off any excess fat. Sprinkle the flour over the sausage and stir to combine. Cook for 1 minute. Gradually add the milk, stirring constantly. Bring to a boil and cook for 2 minutes, or until thickened. Season with pepper.
