Shakshuka

INGREDIENTS

- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic, cumin, paprika, and red pepper flakes. Cook for 1 minute more.
- Stir in the tomatoes and salt. Bring to a simmer and cook for 10 minutes.
- Make 6 wells in the tomato mixture. Crack an egg into each well. Cover the pan and cook until the eggs are set, about 8 minutes.
- Sprinkle with feta cheese and parsley. Serve hot.
