Quinoa & Avocado Salad
This salad is a light and flavorful combination of quinoa, avocado, and vegetables.

INGREDIENTS

- Cut the avocado into cubes and add it to the cooled quinoa. Slice the red bell pepper into thin strips and add it to the bowl. Thinly slice the green onion and add it to the bowl.
- Whisk together the olive oil, lemon juice, and salt in a small bowl. Pour the dressing over the salad and toss to combine.
