Quinoa Pizza Bites
These delicious quinoa pizza bites are the perfect snack for a party or a night in!

INGREDIENTS
- Preheat oven to 350°F. Grease a mini muffin tin with cooking spray.
- In a medium saucepan, bring quinoa and water to a boil. Reduce heat to low, cover, and simmer until all liquid is absorbed, about 15 minutes.
- In a small bowl, mix together olive oil, tomato sauce, oregano, basil, garlic powder, salt, and black pepper. Set aside.
- In a large bowl, combine cooked quinoa, tomato sauce mixture, mozzarella cheese, and parmesan cheese. Mix until well combined.
- Fill each muffin cup with quinoa mixture. Bake for 20 minutes, or until golden brown.
- Let cool for 10 minutes before serving.
