Chicken Biryani

INGREDIENTS

- In a large bowl, combine the yogurt, 1 teaspoon of salt, 1 tablespoon of vegetable oil, garlic, ginger, cumin, coriander, turmeric, cardamom, and cloves. Add the chicken thighs and mix until all pieces are evenly coated. Cover and refrigerate for at least 30 minutes.
- Rinse the basmati rice in a fine mesh strainer until the water runs clear. In a medium saucepan, bring 4 cups of water to a boil. Add the rinsed rice and 1 teaspoon of salt. Reduce heat to low and simmer for 15 minutes. Drain the cooked rice and set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the onions and cook until softened, about 5 minutes. Add the marinated chicken and cook until lightly browned, about 8 minutes. Add the cooked rice, cilantro, and bay leaves. Stir to combine. Cover and reduce heat to low. Simmer for 10 minutes. Serve hot.
