Shrimp Fried Rice
This classic fried rice dish is made with shrimp, eggs, and vegetables.

INGREDIENTS
- Heat a large skillet over medium-high heat. Add the shrimp and cook until pink and cooked through, about 3 minutes. Transfer to a plate.
- In the same skillet, add the rice and cook until lightly browned, about 5 minutes. Add 1/4 cup water and stir to combine. Cover and reduce the heat to low. Simmer for 15 minutes, or until the rice is cooked through.
- Heat the vegetable oil in a separate skillet over medium heat. Crack the eggs into the skillet and scramble until cooked through, about 2 minutes. Transfer to a plate.
- Add the carrots, peas, and green onions to the same skillet and cook until softened, about 3 minutes. Add the cooked shrimp and eggs back to the skillet and stir to combine.
- Add the cooked rice to the skillet and stir to combine. Add the soy sauce and sesame oil and stir to combine. Cook for an additional 2 minutes, or until heated through. Serve hot.
