Chicken and Sausage Gumbo
A delicious Cajun-style gumbo with chicken, sausage, and okra

INGREDIENTS
- (smoked sausage, cut into 1/4 inch slices)

- Heat a large pot over medium-high heat. Add the chicken thighs and cook until browned, about 5 minutes per side. Remove the chicken from the pot and set aside.
- Add the sausage to the pot and cook until lightly browned, about 5 minutes. Add the onion, celery, bell pepper, and garlic and cook until softened, about 5 minutes.
- Add the okra and cook until lightly browned, about 5 minutes. Add the chicken broth, tomato paste, Cajun seasoning, bay leaves, hot sauce, salt, and pepper and stir to combine.
- Return the chicken to the pot and bring to a boil. Reduce the heat to low and simmer until the chicken is cooked through and the flavors have blended, about 30 minutes.
- Stir in the rice and simmer until the rice is cooked through, about 20 minutes. Serve hot.
